No one will know that you used an easy cake mix with this delicious dessert. A mouth watering combination of whip cream and your favourite berries will turn this treat into a family favorite.
Berries and Cream Cake
Preheat oven to 350F. Spray two 8" (or 9" for thinner layers) cake pans with baking spray.
Bake two 8 inch round white cakes according to package directions. Cool in the pan for about 5 minutes, then turn out onto parchment. Cool the cake right side up.
Whipped Cream Frosting:
2 cups heavy cream
1/4 cup powdered sugar
2 teaspoons vanilla
1/2 cup blackberry jam (any other flavour will work just fine)
When you're ready to assemble the cake, prepare the frosting: whip the cream until soft peaks begin to form. Gradually add the sugar while beating; add the vanilla. Continue to whip until the cream holds firm peaks. Fold in ¾ cup of jam of your choice. (I prefer a blackberry mixed jam.) Cover and refrigerate.
Place one cake layer on a cake board or plate, and top with a layer of blackberry jam (same jam you used with the frosting), then a thin layer of whipped frosting. Top with the second cake layer, and spread the whipped cream frosting generously over the entire cake. Decorate with berries of your choice (I used blackberries, blueberries and strawberries) and white chocolate shavings (optional).
Refrigerate the cake until just before serving.
