Chocolate Whipped Shortbread Cookies
1 cup butter, softened
1 1/2 cups all-purpose flour (minus 3 tbsps)
1/2 cup confectioners' sugar
3 tbsps coco powder
Melted white chocolate (optional)
maraschino cherries, quartered (optional)
I find it easiest to measure out the flour and then remove 3 tbsps of the flour and put it back in the bag. Replace those 3 tbsps with coco.
Be sure to whip the cookie dough for the full 10 minutes.
