1 Tbsp olive oil
1 tsp minced garlic
1 medium zucchini
1 medium acorn squash
1 medium yam
1 medium tomato
to taste salt & pepper
1 cup shredded Italian cheese
Preheat oven to 400 and in a 8x8 round or square baking dish put your oil and minced garlic.
Thinly slice all the vegetables
Place the vegetables in the baking dish vertically in an alternating pattern
Sprinkle with salt and pepper
Cover the dish with tin foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown
Note: I made this as a half dish and use a glass loaf pan. Cooking it for 20 minutes (covered) then 15 minutes with cheese.
