Gumdrops
4 Tbsp gelatin (that’s about 6 envelopes)
1 cup cold water
1 1/2 cups boiling water
4 cups sugar
1/4 tsp flavored extract like lemon or peppermint
1-2 drops food coloring (I used four colors)
extra sugar for coating
-In a medium saucepan let gelatin soak for about 6minutes in the cold water
-Add the boiling water and stir until the gelatin is dissolved
-Add the sugar and stir
-Bring this mixture to a boil over medium heat for 25 minutes, stir constantly
-Pour mixture into 4 – 3×5 pans
-Add 1/4 tsp of flavored extract and 2 – 3 drops of food coloring to each pan
-Stir each pan until well blended
-Cover the pans and place in the fridge and chill overnight.
-Cut gelatin into cubes using a knife dipped in hot water (to ease the cutting)
– Roll the cubes in sugar and coat all sides
-Place gumdrops on wax paper and leave at room temperature for 48 hours to crystallize
Store in an airtight container.
